Before ​Kenji’s 15-Minute Creamy Tomato Soup (and its ultra-quick ‍five-minute variant), my go-to ​recipe remained this one from Nordstrom. Although I’ve grown fond of quick cooking methods over time, there’s something special about that ​first encounter with Serious Eats that lingers in my memory.

Given my profession revolves around indulging in an array of baked goods—from cookies​ to cakes—I’m always eager⁣ for ways to incorporate more vegetables into my meals. This is precisely what Nordstrom’s tomato soup accomplishes!

As someone who enjoys⁤ precision ‌in cooking, I took ‍it upon​ myself ⁤to refine some aspects‌ of this recipe for consistency. By converting ingredient measurements into weights—not because tomato soup demands exactitude but because vague terms like “large” can lead to varying results—I aimed for uniformity across batches.

Since acidity⁤ levels vary depending on your choice brand/type canned tomatoes ⁢used; adding baking soda becomes essential if needed! If ‍you find your broth too sharp or acidic‍ after tasting simply sprinkle in ¼ teaspoon baking soda—it will fizz initially due CO2 release so stir well until bubbles dissipate before retasting again—you may need another pinch depending on preference!

When ready it’s time‍ for blending: use an immersion blender directly ‍within pot or let cool slightly before transferring batches carefully into countertop ⁣blenders (to avoid‍ lid ⁢popping⁣ due steam buildup). Straining isn’t necessary here—the cooked veggies create their own wonderfully smooth texture!

I’ve reduced actual heavy cream usage by half—not necessarily aiming at lighter fare—but rather preferring richness⁢ paired alongside gooey grilled ​cheese sandwiches instead! Feel ‍free though if you desire extra creaminess—or thin down with additional stock according personal preference regarding consistency desired!

Finally season generously using salt/pepper/cayenne adjusting‌ amounts based taste buds’ needs ⁣while finishing off with fresh basil right before serving—a little goes far without overwhelming other flavors present within dish itself!

– 3 cans whole tomatoes (28-ounce each; total weight:‌ approx.795g), roughly crushed by hand
– 4⁣ cups homemade or⁣ low-sodium chicken stock
– Optional: Up To⁢ Additional Baking Soda As Needed
– Optional: Heavy Cream For Richness
(8 ounces = approx.,225g)
Salt/Pepper/Cayenne To Taste

**Instructions:**
1) In A‌ Large‌ Stainless Steel Pot Melt Butter Over Medium Heat Until Foaming Then Add Carrots & Onions Cooking Until Browned At Bottom (~15 Minutes).

3) Taste Broth Adding Baking Soda‌ If Too Sharp/Acidic Stirring Well Before Retasting Again.
4) Purée Using Immersion Blender Or⁣ Allow Cooling ‌Slightly Before Transferring Into Countertop Blender For Smooth ⁣Consistency Achieved!
5) Incorporate Heavy Cream Season With Salt/Pepper/Cayenne According Preference Rewarm Prior Serving & Finish Off With Fresh Basil Just Before Enjoyment!
6) Store Leftovers In Sealed Non-Reactive Containers Refrigerated Up ‌To One Week Or Frozen Six Months Without Compromise Quality Retained Over Time.
