2. **Poaching Technique**: Start by combining water and citrus juice before adding your seasoned shrimp; gradually heat until reaching no more than 150°F for tender results.
3. **Flavor Infusion**: Use court bouillon as your poaching medium—it significantly enhances flavor compared to plain water or citrus alone.

Through experimentation comparing various cooking methods—including shell-on versus shelled—I discovered that shelled shrimps absorb flavors better when cooked in court bouillon while still allowing us to utilize shells for added richness in our broth.
